It sounds like an awesome idea.

Would the defenders start at varying spawn points?

Do they get access to zone 2 while defending zone 1?(like you were describing with the church tower for sniper positions)

As I plan things just now the answer to both is yes (the attackers would have advancing spawn points while the defenders had retreating points)- in fact everyone would have access to everywhere but the objectives must be captured in order....like a front line being pushed back (might try and install some way of damaging people who enter active spawn zones though).
