One band that doesn't get enough recognition for their musical skill is Phish. All of the band members have been formally trained on their instruments, and they really can play. I can't even decide on which song I would choose for the best guitar, but there are some really nice riffs in their songs... takes big talent.
Some pretty good choices by you guys too, although, I'll admit I haven't listened to a whole lot of that..... harder rock/metal.... but very familiar w/ Hendrix, Led Zep, Deep Purple, and the stuff from that time period _________________ ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ |

One of the best guitar solos, that isn't all fast and stuff, but people still over look, is the guitar solo in Comfortably Numb, by Pink FLoyd.
David Gilmore is just incredible, he doesn't play very fast or crazy like, but that sound he has is just the perfect mix of crazyness and restraint.
Other than that, i'd say:
Jimmi Hendrix - Little Wing
Stevie Ray Vaugn - Little Wing
Eric Clapton - Cocaine
David Gilmore - Comfortably Numb
In no particular order of course
