I know a lot of people don't like to give up thier secret recipe, but seeing as I plan to grill a lot this summer I'm asking for any sort of recipe or technique that people might have for grilling or BBQing. Favortie hot suaces marinades dry rubs wet rubs favortie wood to smoke with ANYTHING related go ahead. I'd really like to get a smoker in a few weeks too so we'll see how that goes....

Stubbs is my favorite brand of rub, sauce, marinade, you name it. Stubbs also makes awesome seasoning. Just really good stuff and worth trying out.
Smoking wood, mesquite of course.
Recipes?
Chicken Fajitas
Cut about 4 - 5 chicken breasts into strips, like thick french fries or potato wedges. Lay the chicken strips on a sheet of tin foil about the size of a cookie sheet. Fold tin foil corners over to prevent juices from spilling out. Drizzle chicken meat with some yummeh Fajita seasoning on both sides. I recommend Stubbs or Fiesta brand. Cut up some bell pepper, onion, and mushrooms and just throw them on top of the chicken strips. Then, take approximately 5 - 6 huge tablespoons of butter and evenly distribute it over top the veggies and chicken.
Slap your tin foil creation on da grill (just away from flame) and flip everything inside the foil about every 10-15 minutes or so. Takes, oh about 30-40 minutes depending on how much chicken you are cooking.
The rest is just tortillas, hot sauce, and some cheese! Friggen yum. _________________ Recipient of POTM award

Az's steak Marinade:
Half bottle of Fillipo Berio Olive Oil
1 Cup Balsamic Vinegar
More than a dash of Salt
Several Good sprinklings of the following
Cumin seeds (The whole kinds)
Oregano
Parsley
Crushed Red Pepper
Garlic Powder (Don't worry, we'll put some real cloves in later)
Cilantro
There's probably more stuff, but that's pretty much the basic shaker type stuff that goes in there.
Mince 2 fresh cloves of garlic, and toss those in 2.
Add meat, let sit for a couple of hours, a day if you have the time, and forethought.
For Chicken:
Sesame seed oil 2 cups
1 Generous helping of Soy Sauce
a tablespoon or so of ground Ginger
1 clove of garlic
2 fresh green onions, diced
3 Tablespoons of water
salt to taste
You can add actual sesame seeds to the mix, but since you have a heavy helping of sesame seed oil, it won't affect the flavor, it's mainly for it's aesthetic purposes
voila, there you have a fantastic chicken and fish marinade that can server you well whether you're grilling or stir frying!

Sully on a Stick
Take 1 Sully.
Beat relentlessly to soften up.
Slather in butter and generously sprinkle with salt, pepper, and a pinch of cayanne.
Insert stick into predetermined orifice. I prefer the ear.
Sear over high heat until pink inside.
Drizzle with lemon juice and serve!
Enjoy your Sully on a Stick!
FYI: It takes about 3 licks to get to the center of a Sully. _________________

If you're lucky enough to have a smoker, nothing will beat good ole Beer Can Chicken!
You will need: A whole chicken, a can of beer, and a good rub
First, drink half a beer. (I've only used lagers, I wouldn't recommend anything too dark or stout)
Generously apply rub to the chicken
Impale the chicken on the half-empty can of beer. But make sure that the can doesn't get lost in there, the chicken should be able to stand upright on the can.
Place the upright chicken into our smoker until the rub just begans to crisp. Don't worry, the boiling beer will keep the insides of the chicken juicy and tender. I guarentee this will go over great with crowds (especially if you're on a college campus like me ).
As for the rub I typically use....well, I don't exactly have much of a spice rack. I usually crush up some sesame seeds and garlic, mix with brown sugar and vinegar until it all begans to thicken. Its not bad, but some of the rubs mentioned above sound delicious and I'll probably be trying them out _________________

i have to agree with KRG that stubbs is the best kind. id try az's mix as it sounds good and everything he's told me to mix before (mainly drinks) ends up being awesome. |

and one thing, DO NOT clean ur grill, the best flavor somes from the bits of crap that bake onto the griddle and rocks and stuff... at the most give it a quick brushing with a wire brush to get rid of any huge pieces of ash, but thas yo flava son!
also bbq sause is dum to put on while its on the grill, marinades are the way to go _________________

i had some chicken and it tasted like they put wine in it... was wondering if any of you know how to cook something like that....
