I've noticed that some of our northern neighbors preface posts with "sir".

From my area we use this when dealing with someone we dont know in a store type setting or when calling to a stranger who does not fit into the "dude" or "hey man" catagory.
It is always in the verbal form and I have never seen it used in text.

Is this a common way to write up thar ?

Just curious.

I refer to anyone who is older than me and I dont know there name as sir.
